Sausage bake with bell peppers.

Sausage bake is simple one pan dish. It's tasty, it's cheap to make and has plenty of flavour. Not only can it be made in one pan it can also be adapted to cook on the barbecue.

Ingredients:

Sausages
Mushrooms
Garlic
Potatoes
Onions
Bell peppers
Thyme
Olive oil
Seasoning

Method:

Peel the potatoes and cut them into chunks. Peel the onions and cut into chunks and cut the peppers into chunks. The button mushrooms can be left whole and there is no need to peel the garlic cloves unless you prefer them without the skin of course.

Start by  placing the potatoes in a roasting tray and drizzle them with a little olive oil, then roll them around until they are oiled all over. Place in a pre-heated oven (180°c) for 30 minutes turning the potatoes regularly.
As these potatoes are being cooked from raw I like to give them this 30 minute start on the rest of the dish.
By now the potatoes will be browning and going soft in the middle, now is the time to add the onions and garlic and give everything a good turning through the oil with a spatula. Allow to bake for a further 10 minutes to let the onion and garlic start to flavour the oil and then add the sausages and the mushrooms. Sprinkle with fresh or dried thyme.

Allow everything to cook for a further 10 minutes until the sausages and mushrooms start to brown and then add the chopped peppers.









Mix everything together again with the spatula so that everything gets a little coating of oil and then sprinkle with all purpose seasoning of your choice, or simply season with salt and pepper. Allow everything to bake for a further 15 minutes until the sausages are cooked and the peppers are piping hot, but still have some bite to them. There you have it, a cheap and easy meal that not only looks good but tastes delicious too. Serve with a little garlic mayonnaise.
